Tomato galette v1.0

Details

Serves 8 (but, it is a tomato galette, so maybe serve with something else (tbd what is most suitable)

Notes
  • Leave tomatos to dehydrate for longer
  • Without a food processor, the butter really needs to be grated over the flour finely
Ingredients
  • 1 onion, chopped
  • 2 garlic cloves, crushed
  • 120g chorizo, diced
  • 800g chopped tomatoes (tinned)
  • 600g fresh gnocchi
  • 125g mozzarella ball
  • small bunch of basil, torn
Equipment

Works best in the cast iron pot

Method
  1. Fry onion and garlic on medium heat 8-10 minutes
  2. Add chorizo, fry for 5 minutes
  3. Add tomatoes, bring to a boil
  4. Add gnocci, cook for 8 minutes
  5. Stir most of the mozarella through, adding last bit on top
  6. Grill for 3 mins or until cheese is melted.
  7. Scatter with basil
