Tomato galette v1.0
Details
Serves 8 (but, it is a tomato galette, so maybe serve with something else (tbd what is most suitable)
Notes
- Leave tomatos to dehydrate for longer
- Without a food processor, the butter really needs to be grated over the flour finely
Ingredients
- 1 onion, chopped
- 2 garlic cloves, crushed
- 120g chorizo, diced
- 800g chopped tomatoes (tinned)
- 600g fresh gnocchi
- 125g mozzarella ball
- small bunch of basil, torn
Equipment
Works best in the cast iron pot
Method
- Fry onion and garlic on medium heat 8-10 minutes
- Add chorizo, fry for 5 minutes
- Add tomatoes, bring to a boil
- Add gnocci, cook for 8 minutes
- Stir most of the mozarella through, adding last bit on top
- Grill for 3 mins or until cheese is melted.
- Scatter with basil
