Capsicums stuffed with mushrroms and walnuts v0.4

  • Fewer tomatoes, and more cooking time
  • Could do with some cheese
Ingredients
  • 175g chestnut mushroom, diced
  • 1 garlic clove, crushed
  • 12 sundried tomato pieces in oil, drained well
  • 5-8 cherry tomatoes, chopped
  • 50g breadcrumbs
  • 25g walnuts, roughly chopped
  • 1 small bunch parsley, finely chopped
  • 1t dried chilli flakes
  • 4t fresh pesto
  • 2 small capsicums
Method
  1. Cook mushrooms on high, 5 mins
  2. Remove from the heat, add the garlic, tomatoes, breadcrumbs, walnuts, parsely, chilli and pesto
  3. Cut capsicums and remove membranes
  4. Fill with stuffing and bake for 30 minutes

Bake at 200C fan
