Capsicums stuffed with mushrroms and walnuts v0.4

- Fewer tomatoes, and more cooking time
- Could do with some cheese
Ingredients
- 175g chestnut mushroom, diced
- 1 garlic clove, crushed
- 12 sundried tomato pieces in oil, drained well
- 5-8 cherry tomatoes, chopped
- 50g breadcrumbs
- 25g walnuts, roughly chopped
- 1 small bunch parsley, finely chopped
- 1t dried chilli flakes
- 4t fresh pesto
- 2 small capsicums
Method
- Cook mushrooms on high, 5 mins
- Remove from the heat, add the garlic, tomatoes, breadcrumbs, walnuts, parsely, chilli and pesto
- Cut capsicums and remove membranes
- Fill with stuffing and bake for 30 minutes
Bake at 200C fan
