Mushroom Gnocci v0.2

  • Serves 4
Notes
  • I used blue cheese and it worked well last time, but could really do with any strong cheese.
  • Could use something extra like tomato or capsicum
Ingredients
  • 250g mushrooms - sliced
  • 500g fresh (or cooked) gnocchi
  • 160g spinach
  • 100g blue cheese
Method
  1. Combine mushrooms and gnocci in a roasting tin with some olive oil
  2. Roast at 200C (fan) for 25-30 mins
  3. Stir in half the spinach & crumble on the cheese
  4. Replace in oven until cheese is melted
  5. Serve with remaining spinach
