Mushroom Gnocci v0.2

Notes
- I used blue cheese and it worked well last time, but could really do with any strong cheese.
- Could use something extra like tomato or capsicum
Ingredients
- 250g mushrooms - sliced
- 500g fresh (or cooked) gnocchi
- 160g spinach
- 100g blue cheese
Method
- Combine mushrooms and gnocci in a roasting tin with some olive oil
- Roast at 200C (fan) for 25-30 mins
- Stir in half the spinach & crumble on the cheese
- Replace in oven until cheese is melted
- Serve with remaining spinach
