Mushroom Broccoli noodles v0.3

  • Serves 2, could bulk pretty easily
Notes
  • Could use something crunchy like a nut on top
Ingredients
  • 1 vegetable stock cube
  • 2 nests medium egg noodles or similar
  • 1 head broccoli, broken into florets
  • 1T sesame oil
  • 250g shiitake or chestnut mushroom, thickly sliced
  • 2 garlic cloves, finely chopped or minced
  • 0.5t chilli flakes
  • 4 spring onions, thinly sliced
  • 2T hoisin sauce
Method
  1. Cook and broccoli in stock
  2. Reserve cup of stock, then drain
  3. Stir fry mushrooms until golden
  4. Add garlic, chilli, spring onions, cook for a minute
  5. Add noodles and broccoli with some stock and the hoisin sauce
