Marshmallows v1.1

Ingredients

Dusting Mixture

  • 1:1 potato starch and powdered sugar

Gelatin Bloom

  • 120 mL water
  • 22 g gelatin
  • 2 tsp or less of flavour extract (rose, vanilla, mint etc)

Sugar syrup

  • 330 g sugar
  • 385 g light corn syrup
  • 120 mL water
  • pinch salt
  • 5 g vanilla extract
Equipment

9 x 9 inch pan

Method
  1. Cover pan in oil then dusting mix
  2. Add water & non-vanilla flavour
  3. Add gelatin, mix a little, let sit (bloom)
  4. Medium saucepan - add 330g sugar, corn syrup, water & salt
  5. Bring to a light boil, until 115 C
  6. Remove from heat
  7. Whisk gelatin in mixer
  8. Stream the sugar syrup down the side
  9. Bring speed up to high, mix for 4-5 minutes until thick ribbons form
  10. Add vanilla
  11. Tip into prepared pan
  12. Sprinkle with dusting mix
  13. Leave overnight to set
  14. Cut, sprinkle with more dusting mix.
