Marshmallows v1.1
Ingredients
Dusting Mixture
- 1:1 potato starch and powdered sugar
Gelatin Bloom
- 120 mL water
- 22 g gelatin
- 2 tsp or less of flavour extract (rose, vanilla, mint etc)
Sugar syrup
- 330 g sugar
- 385 g light corn syrup
- 120 mL water
- pinch salt
- 5 g vanilla extract
Equipment
9 x 9 inch pan
Method
- Cover pan in oil then dusting mix
- Add water & non-vanilla flavour
- Add gelatin, mix a little, let sit (bloom)
- Medium saucepan - add 330g sugar, corn syrup, water & salt
- Bring to a light boil, until 115 C
- Remove from heat
- Whisk gelatin in mixer
- Stream the sugar syrup down the side
- Bring speed up to high, mix for 4-5 minutes until thick ribbons form
- Add vanilla
- Tip into prepared pan
- Sprinkle with dusting mix
- Leave overnight to set
- Cut, sprinkle with more dusting mix.
