Very chocolatey chocolate chip biscuits v2.1

Ingredients
  • 125g bread flour
  • 95g flour
  • 2t salt
  • 1t bicarb soda
  • 225g unsalted butter
  • 220g dark brown sugar
  • 100g white sugar
  • 2t vanilla extract
  • 1t espresso powder
  • 1 egg
  • 1 egg yolk
  • 85g chocolate chip mix
  • 130g chocolate (chopped)
Method
  1. Sift flour, salt and bicarb
  2. Brown butter - cool
  3. Combine sugar, vanilla, espresso and butter
  4. Cream in 2 or 3 stages
  5. Incorporate egg and yolk
  6. Fold in flour
  7. Fold in chocolate
  8. Refrigerate overnight, or at least 1 hour
  9. Bake at 180C (160C fan)
