Very chocolatey chocolate chip biscuits v2.1
Ingredients
- 125g bread flour
- 95g flour
- 2t salt
- 1t bicarb soda
- 225g unsalted butter
- 220g dark brown sugar
- 100g white sugar
- 2t vanilla extract
- 1t espresso powder
- 1 egg
- 1 egg yolk
- 85g chocolate chip mix
- 130g chocolate (chopped)
Method
- Sift flour, salt and bicarb
- Brown butter - cool
- Combine sugar, vanilla, espresso and butter
- Cream in 2 or 3 stages
- Incorporate egg and yolk
- Fold in flour
- Fold in chocolate
- Refrigerate overnight, or at least 1 hour
- Bake at 180C (160C fan)
