Cheese coins v1.0
Ingredients
- 400g cheddar, in chunks or grated
- 113g butter, frozen, in chunks
- 1 egg White
- 191g self raising flour
- 1t salt
- 0.5t cayenne pepper
Method
- Process cheddar into small pieces
- Add most of frozen butter
- Add flour, salt and cayenne in stages, processing in between
- Add remaining butter
- Shape into rolls and refrigerate for an hour
- Slice dough into discs (keep them under 4cm in diameter)
- Bake at 200C for 4 minutes
- Reduce heat to 160C and bake until edges are golden (10-15 minutes)
