Cheese coins v1.0

Ingredients
  • 400g cheddar, in chunks or grated
  • 113g butter, frozen, in chunks
  • 1 egg White
  • 191g self raising flour
  • 1t salt
  • 0.5t cayenne pepper
Method
  1. Process cheddar into small pieces
  2. Add most of frozen butter
  3. Add flour, salt and cayenne in stages, processing in between
  4. Add remaining butter
  5. Shape into rolls and refrigerate for an hour
  6. Slice dough into discs (keep them under 4cm in diameter)
  7. Bake at 200C for 4 minutes
  8. Reduce heat to 160C and bake until edges are golden (10-15 minutes)
