Cardamom buns v0.3

Ingredients

Buns

  • 10 cardamom pods
  • 350ml 4% milk
  • 200g butter, cubed
  • 500g bread flour
  • 75g golden caster sugar
  • 7g sachet dried yeast
  • 0.5 t ground cinnamon
  • 1 egg, beaten

Filling

  • 25 cardamom pods
  • 150g golden caster sugar

Glaze

  • 2 T pearl sugar
  • 50 mL water
  • 2 T cardamom sugar
Method

Buns

  1. Mince 10 cardamom pods
  2. Warm milk with cardamom until slightly steaming
  3. Add 50g butter and set aside to cool
  4. Combine flour, 75g sugar, yeast, cinnamon and salt
  5. Strain milk and add to flour
  6. Knead for 5 mins
  7. Prove until doubled

Filling

  1. Crush remaining seeds into a powder
  2. Combine with 150g sugar
  3. Mix remaining butter with all but 2T of the cardamom sugar

Assembly

  1. Roll dough into a 35 x 45cm rectangle
  2. Spread cardamom butter over surface
  3. Fold into envelope
  4. Cut into 12 equal strips
  5. Twist into buns
  6. Prove until doubled
  7. Brush with beaten egg
  8. Sprinkle with sugar
  9. Bake 20-25 minutes until golden brown
  10. Tip remaining cardamom sugar into a pan with water
  11. Bring to a boil, then cool.
  12. Brush syrup over buns as they cool
