Cardamom buns v0.3
Ingredients
Buns
- 10 cardamom pods
- 350ml 4% milk
- 200g butter, cubed
- 500g bread flour
- 75g golden caster sugar
- 7g sachet dried yeast
- 0.5 t ground cinnamon
- 1 egg, beaten
Filling
- 25 cardamom pods
- 150g golden caster sugar
Glaze
- 2 T pearl sugar
- 50 mL water
- 2 T cardamom sugar
Method
Buns
- Mince 10 cardamom pods
- Warm milk with cardamom until slightly steaming
- Add 50g butter and set aside to cool
- Combine flour, 75g sugar, yeast, cinnamon and salt
- Strain milk and add to flour
- Knead for 5 mins
- Prove until doubled
Filling
- Crush remaining seeds into a powder
- Combine with 150g sugar
- Mix remaining butter with all but 2T of the cardamom sugar
Assembly
- Roll dough into a 35 x 45cm rectangle
- Spread cardamom butter over surface
- Fold into envelope
- Cut into 12 equal strips
- Twist into buns
- Prove until doubled
- Brush with beaten egg
- Sprinkle with sugar
- Bake 20-25 minutes until golden brown
- Tip remaining cardamom sugar into a pan with water
- Bring to a boil, then cool.
- Brush syrup over buns as they cool
